Apple Pancake Dippers

INGREDIENTS

  • 4 apples, sliced (peeled if desired)
  • 1 batch favorite pancake batter
  • 1 tsp. cinnamon
  • Cooking spray or butter, for pan
  • 1/2 c. cinnamon sugar
  • Maple syrup, for dipping

PREPARATION

  1. Using a melon baller or small cookie cutter, scoop out core in apple slices.
  2. Toss apple slices in pancake batter until totally coated.
  3. Meanwhile, in a large nonstick skillet over medium heat, heat cooking spray or butter. Add apples and cook undisturbed until bubbles form on pancake batter, 2 minutes. Flip and cook 2 minutes more.
  4. Transfer apple pancakes to bowl of cinnamon sugar and toss while warm.
  5. Serve with maple syrup.
